One Piece creator Eiichiro Oda wrote the story, so it’s not just a licensed cash grab that has nothing to do with the creator (which is often the case with many manga/anime games). One Piece Odyssey is a turn-based JRPG focused starring the Straw Hat crew, including Sanji, Usopp, Nami, Zoro, Franky, Chopper, Nico Robin, and Brook. Now, they have to reconnect with lost team members and get back to base. Luffy and the gang get shipwrecked following a superstorm that strands them all on a mysterious island. There have been instances in the past of content being cut from video game adaptations when it would involve upcoming ideas for the manga or anime, such as how developers cut Super Saiyan Gohan from a Dragon Ball Z title on the Super Nintendo. The Straw Hats have set sail on a new adventure in One Piece Odyssey, a new licensed RPG featuring beloved characters from the One Piece manga series. It's likely that development was already underway on One Piece Odyssey when Jimbei officially joined the crew. Oda mentions creating the designs for the game three years ago, suggesting that it started production in 2019. The official trailer for One Piece Odyssey on the Bandai Namco YouTube channel opens with a message from One Piece creator Eiichiro Oda, who has created different character and monster designs for the game. The real reason is likely due to the production schedule for the game. Jimbei only joined the Straw Hats in the most recent arc of the anime, which is still ongoing with no end in sight. One could argue that the timeline is the reason that Jimbei isn't in One Piece Odyssey.
